# What You'll Need:

→ Steak & Marinade

01 - 1 1/2 lbs sirloin steak, cut into 1-inch cubes
02 - 1 tbsp olive oil
03 - 1/2 tsp kosher salt
04 - 1/2 tsp freshly ground black pepper

→ Mushrooms

05 - 8 oz cremini or white mushrooms, cleaned and quartered
06 - 1 tbsp olive oil
07 - 1/4 tsp salt

→ Garlic Butter

08 - 4 tbsp unsalted butter
09 - 4 cloves garlic, minced
10 - 1 tbsp fresh parsley, finely chopped
11 - 1/2 tsp dried thyme
12 - 1 tbsp lemon juice

# How-to Steps:

01 - Pat steak cubes dry with paper towels. Toss with 1 tbsp olive oil, kosher salt, and black pepper. Set aside.
02 - Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add mushrooms, season with salt, and sauté for 4-5 minutes until golden and tender. Transfer mushrooms to a plate.
03 - Add half of the steak cubes to the skillet in a single layer. Sear undisturbed for 2 minutes, flip, and cook for 1-2 minutes until browned and medium-rare. Remove to a plate. Repeat with remaining steak cubes.
04 - Reduce heat to medium. Add butter to the skillet and allow it to melt. Stir in minced garlic and dried thyme; cook for 30 seconds until fragrant.
05 - Return steak bites and mushrooms to the skillet. Toss to coat evenly in the garlic butter for 1 minute. Drizzle lemon juice over and sprinkle with chopped parsley.
06 - Plate immediately, garnishing with additional parsley if desired.

# Expert Pointers:

01 -
  • It tastes like you spent hours in the kitchen when you've actually spent less than 30 minutes.
  • The garlic butter does all the heavy lifting, making even modest steak cuts taste luxurious.
  • Tender mushrooms and perfectly seared steak bites come together in one skillet, no juggling required.
02 -
  • Don't skip drying the steak cubes; moisture is the enemy of browning, and browning is where all the flavor lives.
  • Medium-rare is where steak bites are most tender; anything past that and they start to firm up, even in such small pieces.
03 -
  • If you have time, toss the raw steak cubes with a little minced garlic and olive oil while the mushrooms cook; it gives them a head start on flavor.
  • A splash of beef broth added to the garlic butter transforms it into a silky pan sauce that clings to everything on the plate.
