01 - Preheat grill or grill pan to medium-high. Coat chicken breasts with olive oil, salt, black pepper, and garlic powder. Grill for 5 to 6 minutes per side or until chicken reaches safe internal temperature. Remove from grill and let rest for 5 minutes.
02 - Slice the rested chicken breasts thinly across the grain for easy layering.
03 - Whisk together Dijon mustard, honey, Greek yogurt, and lemon juice in a small mixing bowl. Season with salt and black pepper.
