01 - Line a baking sheet with parchment paper and set aside.
02 - In a medium bowl, combine Greek yogurt, protein powder, honey or maple syrup (if using), vanilla extract, and salt. Mix until smooth and well combined.
03 - Gently fold in the diced strawberries until evenly distributed throughout the yogurt mixture.
04 - Using a small cookie scoop or spoon, portion out 1-tablespoon mounds onto the prepared baking sheet, spacing them evenly apart.
05 - Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are completely firm and set.
06 - If coating with chocolate, melt chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between each interval until smooth. Dip each frozen bite in chocolate or drizzle over the top. Return to the freezer for 10 minutes to set.
07 - Transfer bites to an airtight container and store in the freezer. Let sit at room temperature for 2-3 minutes before serving for optimal texture.
