01 - Whisk together almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl. Let sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours until the mixture thickens to a pudding consistency.
02 - Spoon a layer of chia pudding into the bottom of 4 glasses or jars. Add a layer of diced watermelon over the chia pudding. Top with a sprinkle of mixed fresh berries.
03 - Repeat layers if desired, finishing with fruit and a sprinkle of granola.
04 - Garnish each parfait with fresh mint leaves before serving. Serve immediately, or keep chilled until ready to enjoy.
